Some of you may wonder why the name of this dish is couscous and the product isn't present in its typical from, but a type of pasta in the shape of balls is used instead.
Here we will talk about the Arabic dish Couscous, which is usually prepared from small pieces of durum wheat, like bulgur, in combination with beef or chicken, vegetables, etc., depending on the specific recipe.
There is a special two layers cooking dish, in which this dish is prepared, on one layer the meat and vegetables are made and on the other - the small grains are steamed. In some versions, in addition to wheat - millet, barley and even corn are used.
In our case we will make a non-standard couscous, in which we will replace the pasta or ground grains with vegetables - broccoli. We will also simplify the cooking technology as much as possible, because few households have the above-mentioned two layered cooking dish.
Here is the recipe:
The broccoli is washed very well and only the tips without the hard stems are cut and used.
Grind them at medium speed in a blender, so that only the vegetable grains are visible.
Heat the butter and olive oil over a moderate heat and fry the garlic and the chicken, cut into very small pieces, or even minced. Another option is to boil and cut the chicken breasts and to reduce the broth and use it in the recipe.
Add the broccoli, broth, the three types of peppers and salt and leave the dish to simmer for 7 minutes.
Remove the lid and cook for another 1-2 minutes, while stirring at all times.
The finished interesting and unusual broccoli couscous with chicken is served warm.
