  • sweetener - 1/2 cup granulated from monk fruit (with erythritol)
  • vanilla extract - 1 tsp.

How to make

I suggest, that we make a keto chocolate cake with almond flour. This keto chocolate cake is easy!

From start to finish the whole recipe takes about 30 minutes and does not require any complicated techniques.

This is a great chocolate cake recipe for beginner bakers and a fun recipe to make with your kids.

If you do not want to use almond flour or have an allergy, you can easily replace it with an equal amount of sunflower seed flour or walnut flour. I do not recommend coconut flour, it is highly absorbent flour and will make your cake extremely dry and crumbly.

And as for the type of sweetener you choose, I would like you to be careful with xylitol, it has half the calories and half the carbohydrates of normal sugar. It is also incredibly deadly to dogs/pets. So keep it away from them. Stevia is mostly mixed with sugar!

First of all, you will preheat your oven to 350°F (175 °C) and line two or three cake tins (8″ /20 cm/) with baking paper.

Then sift all of your dry ingredients - cocoa powder, baking powder, almond flour, granulated sweetener - into a large bowl.

Then add the remaining ingredients and mix everything together, until they are well mixed.

For baking, distribute the cake batter evenly in the two or three cake tins. Then smooth out the tops and pat the tins on the worktop to get rid of air bubbles.

Then place the cake tins in the preheated oven and bake them for about 15-20 minutes for each or until they're fully baked.

Once the cake layers are ready, take them out of the oven and leave them cool for a bit in the cake tins. Then transfer them onto a wire rack to cool completely.

While the cake layers are cooling, start preparing the cream with mascarpone.

In a large bowl, whisk the mascarpone and sweetener, until they are well combined. Add a flavor of choice or in this case vanilla extract. Add 1/4 cup cream and beat, until a smooth mixture is obtained.

In a medium bowl, beat the remaining cream well. Gently stir the whipped cream into the mascarpone mixture, until they are completely combined.

Place a cake layer on a serving platter and spread it with 1/3 of the glaze. If desired, you can put a few fresh cherries as an extra.

Cover the cake layer with another one and spread the glaze. Put the final cake layer on top and spread it with the rest of the glaze.

If desired, sprinkle it with coarsely grated chocolate strips or as you like. Enjoy this very easy and delicious macarpone cake.
