How to make
Put the oats in a bowl with a small pinch of salt and pour the milk. Leave them to absorb it and soften.
Blend them in a blender with one banana and a teaspoon of oil, until a smooth mixture is obtained.
If it is very thick, add more vegetable milk.
Heat a non-stick frying pan over medium heat and grease it with oil.
Pour a small ladle of the mixture and spread it with a spoon and shape the pancake. It should not be too thin or too thick.
Put thin slices of the second banana on top.
The mixture is delicate, so make small pancakes, which are easy to turn.
When bubbles start to come out and the pancake visibly starts to bake on top, turn it quickly and bake it on the other side.
Do the same with the rest of the pancake batter and it may be necessary to add more milk or water, because the longer the batter for the vegan pancakes stays, the more it thickens.
I do not add sugar to these protein pancakes, the sweetness of the banana is enough.
