Ingredients

  • chicken thighs - 1 pc. smoked
  • onions - 1/2 pc.
  • peppers - 2 pcs. red
  • tortilla wraps - 2 pcs. large
  • red beans - 3 tbsp
  • olive oil - 2 tbsp
  • cumin - 1/2 tsp ground
  • salt - 1/4 tsp
  • yellow cheese - 3 tbsp grated

How to make

Peel and seed the onion and peppers. Chop the onion finely and cut the peppers into thin stripes.

Bone the chicken and cut it into small chunks.

Heat the oil in a pan at moderate temperature. Saute the onion for about 3 minutes and add the peppers. Cook for 10 minutes for the peppers to soften.

Add the cumin and salt, and stir.

Toss in the beans and keep cooking for about 5 minutes. Heat one tortilla wrap on a dry pan, sprinkle with shredded cheese and add the filling.

Fold the two opposite sides and roll the burrito.

Grill the burrito roll on a grill pan, until golden brown.

Repeat with the second wrap.
