  • asparagus - 7 oz (200 g)
  • yolks - 3 pcs.
  • water - 3 1/3 tbsp (50 ml)
  • garlic - 3 cloves
  • salt
  • black pepper
  • butter - 3.5 oz (100 g)

How to make

For this asparagus with sauce, wash the asparagus, cut them into the same size and peel them.

Put 2 tbsp. from the butter in the pan along with the finely chopped garlic cloves.

When the butter has melted, arrange the asparagus next to each other in it. The asparagus should soften and darken a little and then season them with salt lightly on top and add black pepper.

Leave them aside and they will absorb the rest of the butter.

Start the preparation of the Hollandaise sauce by pouring water into a pot, so that by putting another bowl inside for the water bath, it reaches the bottom but does not sink inside.

Put the 3 yolks inside and start beating them, by controlling the temperature. Pour half a cup of water with a similar temperature to the yolk and continue to beat it.

Then add the lemon juice and a little salt and black pepper at the end and if it starts to thicken, you can add a little more water.

Drizzle the asparagus with the hot sauce on top. Now you have amazing Sauteed Asparagus with Hollandaise Sauce.
