Dutch baby is a big pancake, which is baked in the oven. It is ideal for sharing with friends, for dessert or breakfast.
It is most often garnished with fresh strawberries and powdered sugar, but can also be served with jam and other toppings, as well as other fresh fruit.
You will need a wide pan or cookware, with handles, suitable for cooking both on the hob and in the oven. The diameter should be about 10-11″ (26-28 cm).
Stir the pancake mixture, by first beating the eggs with the sugar until they're liquefied. Add the milk, oil, pinch of salt, vanilla extract and beat well.
Finally, sift the flour in portions and add it little by little, until it's consistency is slightly thicker than boza.
Heat the butter on the stove over a moderate heat and pour the Dutch Baby mixture evenly over the entire surface. Leave it for 2-3 minutes, during which time preheat the oven to 390°F (200 degrees) with the upper and lower resistor wire on or just the top.
Remove the cookware from the heat and put it in the preheated oven.
Bake until it aquires a golden brown color (about 15 minutes), depending on the thickness of the pancake.
It is taken out and while it is hot, fresh fruit are arranged on top of it, it is sprinkled with a topping, whipped cream and powdered sugar - this is according to your taste and imagination.
I made my sweet Dutch Baby pancake with fresh tangerines, whole figs from jam, strawberry topping and whipped cream.
