Ingredients

  • flour - 6 oz (170 g)
  • sugar - 3.9 oz (110 g)
  • baking powder - 1 tsp. with a tip
  • oil - 5 1/3 tbsp (70 ml)
  • eggs - 1 pc. XL
  • frozen fruit - 5.3 oz (150 g) raspberries, blueberries..
  • yogurt - 5 oz (140 g)
  • vanilla essence - 2 - 3 drops
  • salt - 1 pinch

How to make

Leave the frozen fruit at room temperature onto kitchen liquid-absorbent paper. They should be left to defrost and if there's any ice on them it should melt.

Beat the egg with the sugar, salt and vanilla until a white mixture is obtained. Add the yoghurt and oil and continue beating until the mixture is homogeneous.

Add the flour with the baking powder, by sifting it in portions to the mixture and stirring with a wooden or silicone spoon, until the flour is completely absorbed.

In greased and floured muffin tins or paper ones, put a few fruit (if you use sour ones, roll them in sugar in advance), pour the mixture without filling the tins to the brim and finish them off with more fruit.

If desired, you can sprinkle them with sliced ​​almonds or chia seeds.

Bake them for about 20 minutes in a preheated oven at 360°F (180 degrees).

When they are ready, turn off the oven, leave the door ajar without taking out the muffins, until they cool.
