How to make
In a large bowl mix together the flour, sugar, vanilla essence and baking powder.
Add the cold butter and rub it with your hands until it forms crumbs.
Add the yolk and 1-2 tbsp. sour cream, mix well and form a ball from the dough.
Spread 2/3 of the dough into a mold with a diameter of about 9.5″ (24 cm).
Brush the base with the egg white.
Wrap the rest (for the pie rack) in foil and put everything in the fridge for 2 hours.
Peel the peaches.
Cut the peaches and plums into thin slices.
Sprinkle the base with 1 tsp. corn starch, arrange the peaches and plums and sprinkle again with 1 tsp. starch.
Roll out the small part of the dough, cut it into strips and arrange them on top of the pie.
Bake the crostata in a preheated oven at 360°F (180°C) for about 40 minutes.
The summer fruit crostata is very tasty and aromatic.
