  • green tomatoes - 4.4 lb (2 kg)
  • vinegar - about 1 cup (250 ml)
  • sugar - 4 tbsp. with a tip

  • garlic - 6 large cloves
  • dill - 2 stalks
  • parsley - 5 stalks (leaves)
  • olive oil - or oil for topping up the jars

How to make

Before you put these green tomatoes in jars, you need to go through several important steps.

Wash them well and chop the tomatoes in halves or quarters according to their size. Put them in a suitable container - a large bowl or pot and add sugar and salt. Stir them and leave them absorb it for two to three hours.

Then strain the separated liquid and add the same amount of vinegar. Mix it with the tomato liquid and put it on the stove to boil.

When this happens, add the green tomatoes. Leave them for no more than 10 minutes, depending on how firm you want them to be.

Take them out, you can throw away the liquid, you won't need it anymore. Allow the tomatoes to cool and prepare your dishes during this time.

It is best to sterilize the jars first. You can easily do this if you put them in an oven at 210°F (100 degrees) for 15 minutes. However, if the lids are rubber, just boil them in the usual way for ten minutes. Dry them well.

Finely chop the garlic along with the dill and parsley. Pour them over the tomatoes. Fill the jars with the vegetables - they can be warm but not hot. Pour oil or olive oil on top. Close.

Store your wonderful green tomatoes for the winter in a cool and dark place.
