Clean the salmon fillets from the bones, wash and dry them well with kitchen paper.
Place them in a bowl or convenient container and rub them with salt and sugar.
Cut the lemon into circles and arrange them on top and under the fish and drizzle with olive oil on top and add the sprigs of fresh dill.
Wrap the bowl with cling film and refrigerate it for 12 hours.
The marinated salmon can be used to prepare carpaccio, can be an addition to salads, pasta, on toasted slices, cut into thin slices.
*If the marinated salmon will not be consumed the next day, you can store it for up to several days, but you must wash it, dry it and add plenty of olive oil.
