How to make
Wash and cut the edges of the eggplants. Cut them into strips, season them with salt and leave them for half an hour to allow the bitterness to drain.
Turn the oven on at 360°F (180 degrees).
Wash the eggplants and dry them. Arrange them in one or two rectangular greased baking pans. Sprinkle them with olive oil. Roast the eggplants for 10 minutes.
Then prepare the filling for the eggplant rolls.
Crush the garlic and chop the parsley. Add them the cheeses and cottage cheese. Add oregano and olive oil.
Mash and stir to mix everything well. You can add a little more of the cream cheese or olive oil.
Put the stuffing on each strip and wrap the rolls.
Arrange the roasted eggplant rolls with cheese on a tray.
