First, squeeze the juice from the two citrus fruits and mix them with the spices, olive oil, white wine and salt. Put the fish fillets in a suitable bowl and pour the marinade over them.
Cover the bowl with cling film and refrigerate the fish for at least 12 hours. To better marinate this white fish, remove the skin or just buy skinless fillets.
Of course, when grilling without skin, the fish can be torn more easily, but with proper turning and when the grill is greased well, this problem will be avoided.
Take out the marinated fish and place them on a thick layer of kitchen paper. Place another layer on top - this way the moisture will be absorbed better.
Grease the dried fillets with olive oil. Grease the grill and heat it well.
Grill the fish on both sides - for about 2 minutes per side. Serve them with garnish of your choice.
