How to make
Divide the broccoli into pieces, by keeping their stumps as well and cut them into large pieces.
Put water with a pinch or two of salt on the stove. When it boils, put the broccoli along with the stumps inside and boil them for 10 minutes.
Remove them with a slotted spoon and pour cold water over the vegetables. If you think that the stumps are not soft enough, you can boil them for another 2-3 minutes.
Leave the broccoli to cool, during which time squeeze the lemon juice and clean the garlic cloves.
Put all of the products in a blender - boiled and cooled broccoli, garlic, olive oil, walnuts, ground almonds (or whole), freshly squeezed lemon juice, salt and spices.
Blend into a smooth consistency.
I use a blender because most of the time I leave the broccoli a little harder, al dente - so they retain more of their vitamins. But if you have cooked them more and they are very soft, you can also use a liquidizer. Even if you fail to grind the walnuts perfectly with it, it's not a problem. It's also pleasant to feel pieces of them in the spread.
Serve the delicious and healthy broccoli, walnut and almond spread in the company of crackers or toasted slices of bread.
