How to make
Finely chop the garlic, shallots and leeks. Fry them in olive oil for 10 minutes, by adding a little salt.
Add the ginger, peas, celery, parsnips (finely chopped) and the chopped broccoli pieces. Pour water and boil the vegetable soup for 25 minutes.
Add cream, salt, black pepper and stir. In a blender, blend the broccoli cream soup or you can also use a liquidizer. Dilute it, if necessary.
Serve the healthy cream soup warm, served with croutons or crackers.
