Ingredients

  • chicken fillet - 1.4 lb (650 g)
  • broccoli - 1.3 lb (600 g)
  • black pepper
  • lemon juice - from 1 lemon
  • olive oil - 4 tbsp (60 ml) for marinating + about 3 tbsp (30 ml) for baking
  • salt
  • For the cheese sauce
  • cooking cream - 2.5 cups (500 ml)
  • milk - 5 1/3 tbsp (80 ml)
  • roquefort cheese - 3.5 oz (100 g)
  • goat cheese - 3.5 oz (100 g)
  • white pepper - 1 pinch
  • nutmeg - 1 pinch (or by taste)

How to make

From the night before or a few hours before cooking, prepare the meat by cutting it into thin fillets and marinating it in olive oil, lemon juice, a little salt and black pepper. You can also add a sprig of rosemary if you like. Refrigerate it.

In a large pot, boil the salted water and put the broccoli (chopped into large pieces) in it. Boil them for 10-12 minutes, strain them and cover them with cold water.

In a separate small pot, heat the cream and milk over low to medium heat and break/crumble the cheeses inside. Stir until they have melted and season with white pepper and nutmeg.

Add salt if necessary, but do not overdo it, because the cheeses are salty enough. When a smooth and tender sauce is obtained, remove it from the heat and cover it with a lid to keep it warm.

In a non-stick pan, sprinkle it with olive oil and briefly bake the thin fillets on both sides (over medium to high heat) until they aquire an appetizing color.

Serve, by arranging the broccoli and meat in a wide plate and pouring the hot sauce over them.
