How to make
Preheat the oven to 350°F (175 degrees). Grease a baking tray. Heat 2 tbsp. of oil and fry the onions, spring onions and garlic. Add the spinach and parsley and leave them to simmer for another 2 minutes.
Remove them from heat and leave them to cool. In a bowl, beat the eggs, ricotta and feta. Add them to the spinach mixture. One filo pastry sheet is placed in a baking pan, greased with oil and another one is placed on top.
Repeat this with 2 more filo pastry sheets and pour the spinach mixture on top. Cover with the remaining 4 filo pastry sheets, by putting a little oil between them. Bake the pie in the oven for 30-40 minutes.
The Greek Traditional Spinach Pie is ready and it's delicious!
