How to make
The potatoes and eggs are boiled and peeled.
Mash the potatoes with 2-3 tbsp. of olive oil, salt, black pepper and crushed garlic.
The resulting puree doesn't need to be perfectly smooth. From it, meatball-like forms are formed and arranged on a serving platter.
On top of each potato ball, put bundles of the healthy and fresh Valerian salad, which has been pre-seasoned with a little salt, olive oil and lemon juice, if the egg salad is going to be served straight away.
Place the boiled and cut into quarters eggs on top and avocado slices in between. Sprinkle with olive oil, lemon juice and salt and serve the healthy salad while it's fresh.
Due to the combination with mashed potatoes, this healthy egg salad can be served as a main dish - for example, a light dinner or a healthy lunch.
