How to make
Crush the biscuits into flour and place them in a bowl. Melt the butter and pour it over the biscuits. Stir until the biscuits absorb the butter.
Transfer the mixture into a cake tin with a diameter of 10.2″ (26 cm). Form a cheesecake base by hand and form a little boarder on the sides as well.
Put the cheese in a large bowl. Beat it with a mixer for 3-4 seconds. Separate the egg whites from the yolks.
Add 1/3 of the sugar to the yolks and beat until a white mixture is obtained.
Pour them over the cheese and mix with a spatula.
Beat the egg whites into a foamy mixture and gradually add the remaining sugar at the end. Add them to the mixture and mix gently with a spatula. Finally, add the whipped cream and stir again.
Pour the mixture over the biscuit base. Bake the cheesecake in a preheated oven at 340°F (170°C) for about an hour.
Wait for it to cool and spread the jam on it. After 4-5 hours release it from the ring.
You can lightly sprinkle it with powdered sugar.
The baked cheesecake is ready.
