How to make
Cut the spinach and blanch it for 3 minutes in boiling salted water.
Strain it with a colander.
Crumble the white cheese into a bowl. Add the well-strained spinach, season it with 1 teaspoon of paprika, a pinch of freshly chopped mint and tomato puree diluted with a little warm water.
At the bottom of each pot pour 1 tbsp. of olive oil.
Pour the prepared mixture (the products are for 2 servings), cover the pots with a lid and bake them for 20 minutes at 370°F (190°C) in a preheated oven.
Remove the delicious clay pots from the oven, crack two eggs into each one and place them back into the oven.
Bake them until the eggs are fully cooked.
Now the baked clay pots with spinach, white cheese and eggs, need to be sprinkled with a pinch of hot paprika and 1 tsp. of olive oil.
