"Pink tomato, alevropita and a little white cheese - what more does a person need"

  • flour - 5.3 oz (150 g)
  • milk - 1 and 3/4 cup (250 ml)
  • eggs - 1 pc.
  • salt - 1 pinch
  • white brined cheese - 5.3 oz (150 g)
  • cold butter - 1 oz (30 g)
  • olive oil - 2 tbsp.

How to make

Turn on the oven and preheat it to 390°F (200 degrees). Lower the grill to the lowest level.

Grease a pan with a diameter of about 12″ (30 cm) with olive oil in which you will bake the alevropita.

In a bowl, beat the egg with the flour and a pinch of salt. Dilute with the milk, while stirring with a wire whisk until you get a homogeneous mixture, thicker than a pancake mixture.

Cut the cold butter into small pieces and crumble the cheese into small pieces. Put the baking pan with olive oil in the preheated oven for about 3 minutes to heat up and the olive oil to start steaming lightly.

Remove the hot pan and pour the prepared mixture into it. The mixture will go all over the pan. Spread the crumbled cheese and the pieces of butter on top.

Place the pan back into the oven and bake it on the lowest level, for about 40 minutes. Or until it is baked well and aquires a dark golden color. Take it out and leave it aside for 5 minutes. Cut it into pieces and serve it.
