How to make
Crush the yeast in the water, which is slightly warmed to 37°C. Stir and let it activate. If desired, you can add a pinch or two of sugar to speed up the process and feed the yeast.
Sift the flour into a bowl with the salt and make a well in which you can pour the yeast, olive oil and finely chopped scalded nettles.
Knead a smooth and elastic dough and divide it into 12 equal parts.
Grease your hands with olive oil and roll out each ball of dough. Place crumbled white cheese in the middle and close the edges to form a small bun.
Arrange them spaced apart on a tray lined with baking paper or greased with fat.
Leave the buns to rise in a warm place for about 30 to 40 minutes. Spread them with olive oil.
Bake at 390°F (200°C) in a preheated oven for 20-25 minutes or until nicely browned.
Serve the finished olive oil bread buns with nettles and white cheese warm.
