How to make
The vegetables are cleaned and cut into strips and the ginger is grated.
Put them in a pan with hot oil and fry them. Season them with salt, as much black pepper as you like and soy sauce.
The filo pastry sheets are cut in the middle into two equal parts. If they are too thick, they need to be greased with a little oil. Take a bit from the stuffing and place it in the middle of the short side of a filo pastry sheet.
Fold once, then fold on both sides towards the middle. Then the filo pastry sheet with the stuffing is rolled up and at the ends it are smeared with beaten egg so that they do not unfold.
The rolls are arranged in a tray covered with baking paper.
Spread the spring rolls with the remaining beaten egg and bake them in an oven preheated to 180 degrees.
