How to make
Place the cheese for crumbing in the freezer for 15 minutes in advance. Beat the egg yolks with the flour and beer and thoroughly mix them with the beaten egg whites.
Cut the cold cheese into pieces with a thickness of 0.5″ (1 cm) to 2″ (5 cm) and roll them first in ice water, then in crumbing and arrange them on a tray with baking paper.
Put them in a suitable pre-greased pan to bake. Bake in a very strongly heated oven on both sides. Serve with freshly chopped parsley and lemon slices.
