How to make
Mix the oil, water and salt in a pot and once the mixture boils, add the flour in portions, while stirring constantly.
The dough is ready when it begins to peel off the walls and bottom of the dish. Once it it cools, add the eggs one by one and stir well after each one is added.
Line a baking tray with parchment paper and place a spoonfuls of the dough at a distance from each other. You can also shape the dough into balls with your hands for a better look.
Bake the eclairs in a preheated 390°F (200 degree) oven (about half an hour). Do not open the oven during baking and when they are ready, open it very slightly and leave it to cool.
How to prepare the cream: Boil the milk in a saucepan on the stove and in that time beat the eggs with the sugar and flour. Add them to the milk, while stirring at all times. Stir until a smooth cream is obtained.
Cut the already cooled eclairs slightly and fill them with cream. Dip them in pre-melted chocolate or decorate them with a chocolate glaze.
