How to make
Chop the spinach finely and blanch it in boiling water for two minutes. Transfer into a bowl with water and ice cubes, to help it preserve its color, and strain it once cooled.
Separate the egg yolks from the eggwhites, add the yolks to the spinach, beat the eggwhites to stiff peaks and fold them in carefully.
Spread the spinach mix on a tray covered with baking paper and bake for 40 minutes at 250°F (120 degrees). Season the cream cheese with salt and pepper, and spread it on the baked spinach mix.
Place the smoked salmon on top of the cream cheese and fold into a roll. Cut into small medallions and arrange on a platter.
