How to make
Wash the spinach under cold running water. Cut it into small pieces.
Cut a small shallot onion. Heat up a cup of olive oil.
Add the chopped onion and spinach. Cover the pot and stew them for 5-6 minutes.
Wash the rice. Add it to the spinach, pour 3 cups of warm vegetable broth. Season with salt, a pinch of black pepper and chopped mint.
Stir and cover the pot.
Stew the spinach with the rice until it is left in its fat.
Stir the stew from time to time.
Serve the stewed spinach with warm rice sprinkled with black pepper.
