How to make
The cheese is put in the freezer for at least 20 minutes to harden.
During this time, sift the flour into a bowl and mix with a pinch of salt and dry garlic.
In two separate bowls, separate the egg whites from the yolks.
Beat the egg whites with a pinch of salt into a fluffy consistency. Mix the yolks with garlic, mustard and beer.
The yolk mixture is added to the flour and the classic breading is beaten with a wire stirrer.
Add the egg whites in portions and mix lightly with a spatula so that their volume does not decrease. The pate a frire breading mixture should have the texture of a sponge cake.
Take the cheese out of the freezer, cut it into cubes measuring 0.6″ (1.5 cm) by 0.6″ (1.5 cm), dip them in flour, then in the breadcrumbs and fry the breaded cheese bites in hot oil.
