Ingredients

  • spelt flour - 1.5 cup
  • coconut sugar - 1 cup
  • quality dark cocoa - 1/4 cup
  • spelt milk - 1 cup.
  • olive oil - 6 tbsp.
  • baking soda - 1 tsp.
  • lemon juice - from 1/2 lemon
  • lemon peel - the peel of 1/2 lemon
  • salt - a pinch
  • optional
  • nuts
  • chocolate - pieces
  • wild berries
  • espresso - to enhance the chocolate flavor

How to make

Use the same cup to measure the flour, sugar, cocoa and milk.

Put all the ingredients into a bowl and mix them with a wire whisk.

Pour the mixture into a cake pan lined with baking paper and bake in a preheated oven at 360°F (180°C) for about 35-40 minutes.

Check the sponge cake with a toothpick and decide whether the cake is ready or needs another 3-4 minutes.

Allow it to cool and it's done.
