Ingredients

  • butter - 1/2 cup (120 g) at room temperature
  • powdered sugar - 2/5 cup (100 g)
  • sugar - 2 1/3 tbsp (35 g)
  • flour - 1/3 cup (80 g)
  • starch - 3 1/3 tbsp (50 g)
  • eggs - 4 egg yolks + 2 egg whites
  • lemons - rind of 1 lemon
  • baking powder - 1 tsp
  • salt - 1 pinch
  • liquid cream - 1 2/3 cups (400 ml), sweet
  • white chocolate - 3.5 oz (100 g)
  • essence - 1 tsp, rum
  • pineapples - 1, and fruits for decoration by choice
  • sugar - 1 cup, for the caramelized sugar

How to make

Beat the soft butter with the powdered sugar well and add the egg yolks. Then add the flour, starch, salt, and mix well. Finally, stir the mixture with the beaten to snow egg whites along with the granulated sugar. Put it into a greased baking dish and bake at 360°F (180 °C) for about 30-35 minutes.

Leave the prepared layer to cool slightly and divide it into 2 separate layers. Beat the cream until fluffy in texture and stir it with the rum extract and melted chocolate. Smear one layer with cream, if desired put pineapple slices on it, cover it with the second layer, then coat the entire cake thoroughly with cream.

On top, arrange pineapple slices or other fruits for decoration. Melt the 1 cup sugar in a large tray with 2 tablespoons water, so that you get a thin caramelized layer. Allow it to cool and then crush it.

Decorate the Paradiso cake with the caramelized sugar and put it in the refrigerator for 2 hours.
