Cut the pork into pieces.
Fry them until golden in a little fat. Add onions, mushrooms, peppers, garlic, carrots and homemade universal spice to the meat.
Leave it like that until the vegetables soften and then add the chopped potatoes.
Pour enough water to cover the food and simmer over low heat.
Stir from time to time and when the potatoes and meat are completely cooked add more water.
When the potatoes and meat are completely cooked, add the canned tomatoes and finely chopped parsley.
Let it boil for a short amount of time and remove it from the heat. Serve while the stew is still warm.
