How to make
Cut the sausages into two or three pieces, if desired you can leave them whole, but then the cooking time will be longer.
Peel the vegetables, roughly chop the onion, finely chop the garlic. Put olive oil in a deep pan and heat it on the stove.
Fry the sausage pieces for 5 minutes until golden.
Remove from the pan and drain on kitchen paper.
Put the onion in the same pan and fry until golden, add the garlic, stir and cook for a few seconds, being careful not to burn the garlic.
Put the tomatoes in, add a teaspoon of sugar, salt, pepper, oregano, and basil. Stir and cook for 10 minutes on medium heat.
Finally, add the sausages, stir and remove from the heat. Preheat oven to 360°F (180 degrees).
Take a tray, pour the mixture into it, and crack the eggs inside the dish, putting them at a distance from each other.
Bake the quick dish until the eggs are ready, for about 5 minutes.
Serve this dinner with sausages and eggs with fresh parsley.
