How to make
Peel and chop the onion and garlic finely. Saute them in a pot with the olive oil.
Wash the tomatoes, skin them and grade them. Add the tomatoes to the pot with the onion and garlic. Simmer for 7-8 minutes and add one liter of boiling water.
Season the soup with salt and black pepper to taste.
Let it simmer for an hour, then remove it from the stove, add the finely chopped parsley and basil and blend the soup.
Add the butter and stir. Serve with leaves of fresh basil and toasted bread flavoured with salt, butter and parsley.
