How to make
Cut the beef into pieces, pour cold water over it, and boil it. Remove the foam, strain the broth, and cook the meat pieces in a pressure cooker for about 40 minutes.
Meanwhile, in another saucepan with a little olive oil, sauté 1 onion, chopped baby carrots, 1 red pepper, 1 diced tomato, and 3 medium potatoes.
When the vegetables soften, pour the broth, add the celery sticks and a few grains of black pepper, simmering until tender.
Towards the end add the beef, let it cook for another 10 minutes, and season with salt, ground black pepper, and finely chopped celery leaves.
Serve the cooked boiled beef while it is still warm.
