How to make
Cut the feta cheese into cubes of equal size. Put them in the freezer for 10-15 minutes. Beat the eggs and heat oil for frying. Roll each piece of cheese into the potato puree, mixed with breadcrumbs, eggs and cereal and drop them to fry up to a nice tan on both sides.
For thicker crumbing, you can dip them twice in the egg and breadcrumbs with mashed potato puree. When ready, drain them on a wire rack with paper towels underneath.
