How to make
Clean the fish under a strong stream of cold water. Remove the heads and entrails of the fish and salt them.
Arrange the salted fish in a pre-greased baking dish, cover with grated tomatoes and pressed garlic cloves. Pour the rest of the olive oil in and season it with black pepper.
Bake the fish for 10 minutes in a preheated 390°F (200 °C) oven, then reduce the temperature to 360°F (180 °C) and bake another 30 minutes.
Before presenting sprinkle with plenty of fresh parsley.
