"Staying on a diet is easy up until the point when a neighbor shows up at the door with a tasty cobbler!"

Ingredients

  • butter - 2/5 cup (100 g)
  • eggs - 4
  • sugar - about 2/3 cup (150 g)
  • flour - 1 cup (250 g)
  • milk - 2/3 cup (150 ml)
  • lemons - grated lemon peel + a little lemon juice
  • baking powder - 1 packet
  • fruits - 1 cup (250 g) dried, or fresh
  • salt - 1 pinch
measures

How to make

Pre-soak the dried fruits in water to swell. If using fresh, chop them finely and let them dry a bit. Beat the butter with the sugar into foam and add the egg yolks one by one, while adding a little flour and milk after each.

Then add the lemon zest and juice, and finally mix with the egg whites, beaten with a pinch of salt. Then mix with the drained and dried dried fruits. If using fresh fruits, put them on the cake after you've put it to bake and before it catches a crust. Bake the cake until ready in a moderate oven.

The best cobbler is made with strawberries, peaches, apples, plums and grapes. With a mix of dried fruits, it is no less appetizing.

Optionally, you can add your favorite kind of nuts.
