How to make
Cut the peaches into pieces, add the sugar and pour water over them. The water should be one finger above the fruit. Boil them until they soften. Strain and set them aside.
Crack the eggs into a bowl, add the sugar and beat them into a fluffy cream. Add the flour in portions, while stirring with a spoon, until the products are well homogenized.
Pour a little bit from the whipped mixture into a cup and color it with cocoa. Line a large baking tray with parchment paper. Melt the butter and arrange the peaches on top.
Pour the cake mixture over them and smooth it out. Using a spoon, pour the brown mixture in several places and spread it in random shapes.
Bake the roll in a preheated oven at 390°F (200°C) for 8-10 minutes. Sprinkle sugar on a towel. Turn the peach roll over onto the towel and immediately roll it up.
Allow your peach roll to cool completely before removing the towel.
