Ingredients

  • yeast - 1 1/3 tsp (7 g) dry
  • olive oil - 5 - 6 tablespoons, or sunflower oil
  • water - 1 1/2 cups hot
  • sugar - 1 tbsp
  • salt - 1/2 tbsp
  • yogurt - 2 tbsp
  • baking soda - 1/2 tsp
  • flour - as necessary, for a soft dough
  • feta cheese - crumbled, for the filling
  • oil - for the stuffing

How to make

Extinguish the baking soda in the yogurt. Knead a dough from the products gradually, initially put just a little bit of flour to obtain a slurry density. Allow to rest for 15 minutes then add in more flour, knead until you get a very soft dough.

Leave to rest for 15 more minutes. Divide the dough into 2 balls. Stretch out each ball into a long rectangle, brush them with a little oil and sprinkle with grated feta cheese, wrap them individually, and then form a loaf by putting them together.

Put them in a greased baking dish (about 10″ (25 cm) diameter) and put it to rise and double in volume in a warm place, for about 2 hours. You can also use a low oven. Smear the risen loaf with a little oil on top and put it to bake until ready.

Check it with a stick. Once baked, wrap it in a towel.
