How to make
In a saucepan, melt the butter on medium heat. Insert th chopped onions and stew until soft. Add potatoes and 1 liter of hot water. If you’d like, you can replace the water with chicken broth. Cover the pan with a lid.
The potatoes are boiled for about 15 minutes, until tender. Add the peas and boil the soup again. Boil for 10 minutes. Lastly, add fresh mint. Flavor with salt and pepper and remove from the heat.
Blend the soup in a blender. Pour it into bowls and garnish with a spoonful of sour cream.
