How to make
Break the eggs in a bowl and add the sugar. Beat with a mixer until whitened.
Then add the fruits from the compote and just 2 tbsp of the juice, beat with the mixer on low and add the baking soda and oil.
Once beaten well, gradually add the flour, while stirring with a wooden spoon.
Pour the mixture into a well oiled and floured form. Bake at 390°F (200 °C) about 30 min.
Poke it with a toothpick to see if it's baked properly.
Optionally, sprinkle with powdered sugar.
