How to make
Put the meat into a suitable container with white wine, add a few grains of pepper and leave to marinate in the cold for about 48 hours then remove from the marinade, drain and fry on all sides in oil until golden in color.
Place it in a pan, add rosemary and sage, flavor with salt and pepper and pour in the milk. Put it to bake about 90 minutes at 390°F (200° C).
The meat is served cut into slices. The remaining sauce is thickened, deglazed or, if necessary, poured on the meat.
