Mediterranean Skewers
Ingredients: 25 large unpeeled shrimp, 3 1/3 tbsp butter, 2 tablespoons olive oil, several bunches of finely chopped fresh thyme, parsley and oregano, several chopped small onions, 1/2 a red pepper, 1/2 a green pepper, 1 lemon, salt and black pepper to taste.
Preparation: Cut the peppers into strips and put them in a bowl with the shrimp and onions. In a separate container mix all the remaining spices, excluding the lemon. Pour this mixture, which plays the role of a marinade, over the products and leave in the refrigerator for one day.
Once this time has elapsed, string the shrimp onto skewers along with the peppers and onions and cut slices of lemon. Cook on a highly heated grill for about 2 min. on each side and sprinkle on the remaining marinade over them.
American Beef and Veal Skewers
Ingredients: 10.5 oz deboned veal leg, 10.5 oz deboned beef fillet, 1/4 cup oil, 1 tablespoon lemon juice, 1 tablespoon ground cumin, 1/2 cup ground onions, salt to taste.
Preparation: Mix all of spices and onions in a bowl. Wash the meat and cut it into equal sized pieces, then put them into the bowl with the spices. Let them sit for 1 to 2 hours, to take in all the aromas.
Once ready, string onto skewers, alternating between veal and beef meat. Salt the skewers and bake them in a preheated 430°F (220° C) oven, turning them on all sides until fully ready. Pour the marinade into a separate pot, bring it to a boil and serve separately as a sauce.
Japanese Chicken Skewers
Ingredients: 2 chicken breasts, 4 skinless, deboned chicken legs, 1 onion head, 5 tablespoons dark soya sauce, 2 tablespoons, 2 tablespoons mirin, 2 tablespoons sake, 1 tablespoon sugar, 1/4 tsp salt, 1 2/3 cups water.
Preparation: Pour half of all of the spices in a container and mix them together. To them add 1/2 cup water. Cut the chicken meat into equal sized pieces. Cut the onion in 2 and peel all of the layers. String the meat and onions onto skewers, alternating between them.
Put the prepared spice blend in an oven dish, place the skewers on top. Bake in a preheated 430°F (220° C) oven, turning them over periodically.
Put the rest of the spices along with the rest of the water to boil for 10 min. and serve thus prepared sauce along with the skewers.
