In order not to lose its color, put a little sugar and vinegar in the water, but keep in mind that vinegar can increase the boiling time. Do not put salt in the water.
Pour the boiled beets in cold water or put them under running water for a few minutes. This way, the beets will be tender enough to eat, but without being boiling for too long. If the beet heads are smaller, you can choose not to cut them and boil them whole. Do not peel the beets before boiling. Peel them after.
