How is modified starch produced?
Basically, the word modification means to change something. Specifically for this starch, the modification changes its properties at the genetic level, so that the end product can have much better characteristics.
Modified starch is a type of white powder that is obtained from potatoes and is subjected to thermal, chemical, physical or biochemical treatment in order to obtain a substance that has precisely defined characteristics and parameters and is suitable for use in the production of precisely certain foods.
Food products are currently available in stores, which contain:
- swelling modified starch, which is used as a filler;
- liquid modified starch, which is boiled;
- thermally separated modified starch - are used in the production of many foods and there is almost no food, that does not contain modified starch.
Use of modified starch
Despite the fact that this starch goes through various treatments, it also contains quite a few useful substances that our body needs, such as calcium, phosphorus, sodium, magnesium, potassium, unsaturated fatty acids, monosaccharides and dietary fiber.

Is modified starch harmful?
Like all modified products, this starch can be life-threatening and health-threatening. It has not been scientifically proven what effect modified starch has on our body.
