How to make
Dissolve the yeast and sugar in the warm water. Sift the flour in a bowl and form a well, add the salt and oil in it. Pour in the water with the dissolved yeast and sugar and knead a soft dough.
Divide the dough into 4 equal-sized parts and shape them into balls. Cover the dough balls with a clean towel and leave them as is for 30 min.
Stretch out each with your hands into a round sheet about 1/2″ (1 cm) thick. Arrange them in a tray laid out with baking paper and cover with a towel again, leave as is for 30 min.
With the dull edge of the knife, make squares or rhombuses. Smear the pitas with a little oil on top using a brush, sprinkle with a pinch of sesame seeds, oregano and coarse salt.
Place the tray in a preheated 390°F (200 °C) oven and bake about 15-20 min., depending on the oven. The result is fantastically soft and tasty lean pitas.
