How to make
Boil a sugar syrup from the sugar and water and add a pinch of citric acid with the vanilla. Allow the syrup to cool.
Stir the curd with the semolina. Form 30 smooth balls the size of a walnut.
Optionally, dye the mixture with a confectionery dye of your choice.
In a large pot, pour about 6 1/5 cups (1.5 liters) of water with a little salt to boil. Boil the balls - during cooking, they will increase in volume.
Boiling takes about 5 minutes or a little more.
When the balls are ready, take them out with a slotted spoon and drain them of the water.
Once cool, pour the sugar syrup over them and they are ready for consumption.
