  • flour - 2 lb (1 kg)
  • yeast - 2 2/3 tbsp (40 g), fresh
  • water - 2 1/2 cups (600 ml), cool
  • sugar - 1 tbsp
  • salt - 1 tsp

How to make

Sift the flour and salt in a deep container. Dilute the yeast in cool water, along with the sugar and a pinch of flour to activate it. Knead a soft and sticky dough.

Let it rise for about 1 1/2 hours (if the room is cold it might take longer), then knead again, put it in a clay pot and let rise for another hour. Bake under a lid for 15-20 min. at 430°F (220 °C).

It's good to put ice cubes or a tray with water at the bottom of the oven to retain humidity during baking. After the 20th minute, lower the oven to 360°F (180 °C), remove the water and bake the bread until ready.

If using a clay pot with a tight opening, you're going to have to carefully push the bread in. This isn't a problem with larger clay pots.
