How to make
Lay out the phyllo pastry sheets. Take a sheet and fold it to make it look like an accordion. Lay it out again in a buttered oven dish. Do this for all of the sheets. Bake at 390°F (200 °C) until golden. Beat the eggs with the sugar.
Add the yoghurt, flour and baking powder. Pour this mixture over the sheets. Return to the oven and bake about 30-35 min. Leave the cake to cool.
Boil a syrup from the sugar, water and vanilla. Pour the warm syrup over the cooled cake. Sprinkle with coconut flakes and leave in the fridge to cool.
