How to make
Mix the yeast with 1 2/3 cups (400 ml) warm milk, 1 tsp sugar and several tbsp of flour. Once it becomes effervescent, add it to 1 2/3 cups (400 g) flour, 1 egg, 3-4 tbsp oil, salt and knead a soft dough, while gradually adding the rest of the flour.
It's going to absorb about 2 lb (1 kg). Once it stops sticking to the hands, hit it 100 times on the counter. Leave it to rise well and form a pita.
Leave it to rest about 15 min., then make several cuts, to guarantee even baking, and put it in an oven preheated to the max, lower it to 390°F (200 °C) on the lower element.
Bake to a nice crisp. It's baked once you hear a hollow sound when you tap on it.
