Ingredients

  • flour - 2 cups
  • oil - 1/2 cup
  • orange juice - 1/2 cup
  • sugar - 1/2 cup
  • baking powder - 1
  • baking soda - 1 tsp (dissolved in 1 tsp cognac)
  • walnuts - 1 cup, ground
  • carrots - 2, coarsely grated
  • apples - coarsely grated

How to make

Combine the oil, orange juice, sugar and baking soda (mixed with the cognac). Stir with a spatula until the sugar dissolves.

Add the sifted flour, combined with the baking powder and stir to a homogeneous mixture.

To it, add the ground walnuts, apples and carrots, stirring once again. Pour the mixture into a cake tray, laid out with baking paper.

Bake in a preheated 360°F (180 °C) oven for about 45 min.

While still warm, sprinkle with powdered sugar.
